Method
Tortillas
- Add flour, water, and salt. Mix and knead until all the ingredients are incorporated and form a soft ball of dough. Cover the bowl with wrapping paper or wet kitchen towel and let it sit for 30 minutes or until other ingredients for tacos are ready.
- Below you can find instructions for preparing other ingredients for tacos and once all those are ready (except tofu sticks, which we'll prepare at the very end), go back to tortillas.
- Roll tortilla dough onto a floured surface and shape it into a round ball. Cut it into quarters and shape each of the pieces into a ball. Cut each ball into 8 pieces (like cutting a pizza). You'll get very small pieces of dough. Shape each one of them into a small ball.
- Now flour your working surface and roll each little ball out with a rolling pin. You should get a circle the size of your palm.
- Bake tortillas in a hot pan without oil. It should take roughly a minute on one side and about 30 seconds on the other side. If you can't keep up, lower the temperature and bake them a little longer while rolling out other tortillas.
- When tortillas are baked, wrap them up in a wet kitchen towel. This will make them soft and keep them from drying out.
- Hint: you can make tortillas in advance. Bake them a little less and then warm them up the next day or bake them all the way through and simply serve them cold.
Tofu sticks
- Cut tofu into sticks that resemble the length and thickness of your index finger.
- Put soy sauce into a plate or a large bowl. Dip each of the tofu sticks into the soy sauce so that each stick is completely covered in soy sauce. Place them onto a plate and put them aside so they marinate while we prepare other stuff.
- Let them sit while you prepare guacamole, tomato salad, and other ingredients. Let them sit while you bake tortillas. Once everything is ready, bake them in some oil in a pan, it's the easiest and fastest.
- You can also bake them in the oven, but do that while you bake tortillas, because the oven will take some time to warm up and it will take about 20 minutes to bake tofu sticks. In case you prepped your tortillas the day before, bake tofu sticks while you prepare other ingredients.
Guacamole
- Cut avocados in half, take the stone out and remove the meat from the skin. Mash it with a fork.
- Add lime juice, garlic, shallot, and salt and mix it all in. Set aside.
Tomato salad
- Cut tomatoes into small pieces and put them into a bowl. Chop shallots. Add shallots to tomatoes and sprinkle with salt, pepper, and oregano. Mix well.
- Add 4 tbsp of tomato salad to guacamole and mix it into the dip.
Other ingredients
- I use canned sweet corn and canned red kidney beans so there's not much to do here. Strain them and add them to a bowl. You can keep them separate or mix them together in one large bowl.
- Clean and wash lettuce and cut it into short strips.
Putting together your tacos
- Take one tortilla and spread a bit of guacamole on top of it. Add lettuce, tomato salad, corn, and beans. In the end, add tofu sticks and sprinkle with some lime juice. Enjoy!
