Tacos are a classic and we all need a good taco recipe in our lives. This one has been approved by many non-vegans so I’m confident to say these simple vegan tacos rock!

Vegan Tacos For Life
We had it coming, haven’t we? Taco Tuesday is one of the most well-known phrases in the world. Although most of us aren’t having tacos every Tuesday, there’s a special feeling to actually having tacos on a Tuesday, isn’t there?
I must admit I’m not crazy about tacos, at least not enough to have them every week. Peter, on the other hand, could have tortilla wraps of all kinds all the time. This is the first taco recipe I’ve started using regularly because it’s really simple and really tasty. But I’m sure there are more coming. I know myself well enough by now.
Before I landed on this recipe I tried a few vegan tacos ideas, from including cabbage or kimchi to including yogurt sauce and not including guacamole. This final recipe is well-thought-through. For me, guacamole, corn, red kidney beans, and lime scream Mexico, so I simply had to include all of these in this very first taco recipe on this blog. I know I could eat these vegan tacos for life without trying any other tacos ever again. #tacos4life
Ingredients list
Tacos usually include minced meat or chicken strips – we’re not using a vegan alternative for meat in this case. We’re going all natural and using regular firm tofu, which is a great alternative to meat in any recipe for vegetarian tacos (or vegan in this case). A vegan meat alternative is a great way to add a meaty texture and taste, but if you’re not missing meat all that much, tofu will be your “meat” of choice. Fun fact: not one of our non-vegan friends said anything bad about tofu – on the contrary, they loved it!
I believe that tortilla wraps like burritos, tacos, etc. allow for a lot of creative space. This recipe calls for a few ingredients that create a lovely and delicious harmony in your mouth. After trying this recipe you can go on and create your own!
Tortillas: I’m making my own tortillas, simply because I really hate seeing all of the unnecessary ingredients on the packaging of store-bought tortillas. Don’t even let me start on the plastic packaging! Homemade tortillas are really easy to make and cheap, and you only need 3 ingredients – flour, water, and salt.
Guacamole: another thing you can buy in the store in plastic packaging and full of additives, colorants, and preservatives. I’m choosing to make homemade guacamole and once again, it’s really simple to make. The recipe is below in the recipe card and it doesn’t take more than 5 minutes to make. I make it on its own sometimes and have it with tortilla chips while watching a movie or reading a book.
Tomato salad: finely chopped tomatoes, shallots, oregano, and salt. That’s it! This recipe is called simple vegan tacos for a reason.
Tofu sticks: natural tofu, simply dunked into soy sauce and baked with some olive oil. Simple as that! I usually make a marinade with soy sauce and spices, but for this recipe, I really wanted to keep it simple. There are a lot of tastes in the game and I wanted them to fall together nicely. Soy sauce and nothing else was the best way to go. Don’t have soy sauce? No worries, bake tofu as is, just make sure to add some salt to it. It will be great nonetheless.
Corn and red kidney beans: I use canned corn and beans – it’s the easiest way and to be honest. I have never seen dry red kidney beans in Slovenia. If you know where to get them, let me know, I’d love to try them! Both give these tacos a lovely Mexican note and some colour.
Lime: lime juice is one of the ingredients in guacamole, too. You can replace them with lemons, but if you can get your hand on limes, choose limes. They have a different aroma that fits perfectly into this harmony of tastes.
Left-Overs: You might end up with some left-overs. You wouldn’t believe how filling these simple vegan tacos are! Tacos can be eaten cold, too, so have them the next day. Did anyone say tacos for breakfast? I’m all up for it!
Taco night with friends
A week ago we had some friends over for lunch. 4 of us first went for a hike and then we met up at our place for a taco party. It wasn’t exactly a taco night, but it surely was a great meal for everyone. Another friend came for lunch so 5 people were eating and three of them were not vegans. They all loved these tacos which made me super happy!
I love having friends over – may it be for breakfast, lunch, dinner, coffee and cake, lemonade, anything. Seeing them smile and love my food makes me feel even more passionate about cooking and developing awesome recipes.
This taco recipe is one of my go-to recipes for when I have people over. It truly is a people pleaser – you have all these ingredients and people can choose which ones they’ll use or if they want to leave some out, and it’s a great opportunity to connect with them by passing ingredients over the table, chatting, looking into each other’s eyes and sharing some delicious food.

Simple Vegan Tacos
Ingredients
Tortillas
- 440 g flour
- 240 ml water
- pinch salt
Tofu sticks
- 400 g tofu natural or smoked
- 2 tbsp soy sauce dark
Guacamole
- 2 avocados
- 1 tsp granulated garlic
- 1 shallot
- 1 tsp salt
- 1 lime juice
Tomato salad
- 4 tomatoes
- 2 shallots
- ½ tsp oregano dried
- pinch salt
- pinch pepper black, freshly ground
- * chili if you want
Other
- 4 tbsp sweet corn
- 4 tbsp red beans
- lettuce or ruccola
Instructions
Tortillas
- Add flour, water, and salt. Mix and knead until all the ingredients are incorporated and form a soft ball of dough. Cover the bowl with wrapping paper or wet kitchen towel and let it sit for 30 minutes or until other ingredients for tacos are ready.
- Below you can find instructions for preparing other ingredients for tacos and once all those are ready (except tofu sticks, which we'll prepare at the very end), go back to tortillas.
- Roll tortilla dough onto a floured surface and shape it into a round ball. Cut it into quarters and shape each of the pieces into a ball. Cut each ball into 8 pieces (like cutting a pizza). You'll get very small pieces of dough. Shape each one of them into a small ball.
- Now flour your working surface and roll each little ball out with a rolling pin. You should get a circle the size of your palm.
- Bake tortillas in a hot pan without oil. It should take roughly a minute on one side and about 30 seconds on the other side. If you can't keep up, lower the temperature and bake them a little longer while rolling out other tortillas.
- When tortillas are baked, wrap them up in a wet kitchen towel. This will make them soft and keep them from drying out.
- Hint: you can make tortillas in advance. Bake them a little less and then warm them up the next day or bake them all the way through and simply serve them cold.
Tofu sticks
- Cut tofu into sticks that resemble the length and thickness of your index finger.
- Put soy sauce into a plate or a large bowl. Dip each of the tofu sticks into the soy sauce so that each stick is completely covered in soy sauce. Place them onto a plate and put them aside so they marinate while we prepare other stuff.
- Let them sit while you prepare guacamole, tomato salad, and other ingredients. Let them sit while you bake tortillas. Once everything is ready, bake them in some oil in a pan, it's the easiest and fastest.
- You can also bake them in the oven, but do that while you bake tortillas, because the oven will take some time to warm up and it will take about 20 minutes to bake tofu sticks. In case you prepped your tortillas the day before, bake tofu sticks while you prepare other ingredients.
Guacamole
- Cut avocados in half, take the stone out and remove the meat from the skin. Mash it with a fork.
- Add lime juice, garlic, shallot, and salt and mix it all in. Set aside.
Tomato salad
- Cut tomatoes into small pieces and put them into a bowl. Chop shallots. Add shallots to tomatoes and sprinkle with salt, pepper, and oregano. Mix well.
- Add 4 tbsp of tomato salad to guacamole and mix it into the dip.
Other ingredients
- I use canned sweet corn and canned red kidney beans so there's not much to do here. Strain them and add them to a bowl. You can keep them separate or mix them together in one large bowl.
- Clean and wash lettuce and cut it into short strips.
Putting together your tacos
- Take one tortilla and spread a bit of guacamole on top of it. Add lettuce, tomato salad, corn, and beans. In the end, add tofu sticks and sprinkle with some lime juice. Enjoy!
