Plum Cake with Lemon Zest

Incredibly simple plum cake with a zing of lemon zest and just enough sweetness. Fat-free and full of fibre, it works great as a breakfast too.

Ingredients
  

  • 300 g spelt flour whole-meal
  • 80 g brown sugar
  • 4 tsp baking powder
  • 3 tsp lemon zest bio lemon
  • pinch salt
  • 5 tsp cinnamon
  • 1/2 lemon juice
  • 250 ml plant milk
  • 200 g plant yogurt
  • 1/3 tsp vanilla essence
  • 400 g fresh plums

Method
 

  1. Put all of the dry ingredients into a big bowl and whisk together.
  2. In a separate bowl combine plant milk and lemon juice. Let it sit for a few minutes.
  3. Add yogurt and vanilla essence. Whisk well.
  4. Wash plums. Cut them in half, take the pit out.
  5. Combine wet ingredients with dry ingredients. Pour the batter into a greased pan (or line it with parchment paper).
  6. Now add halves of plums facing up. You can play around with the patterns of plums.
  7. Bake at 180°C for 40-45 minutes. You can have it warm or cold.
