Put all dry ingredients into a bowl. Mix them well using a whisk or your hand.⠀⠀⠀
Mash banana with a fork. Put coconut mousse and agave syrup into a small pot and melt on low heat. Once melted, put mashed banana into the same pot and stir it into that sweet coconuty mixture.⠀
Pour wet ingredients over dry ingredients and mix well using your hand.⠀
Put onto a baking tray lined with parchment paper. If you want to get chunks, then press granola into the surface.
Bake on 180°C for 20 minutes. Stir every 5-7 minutes, if you want chunks give it a light stir only once. Be careful at the end, the baking time depends on the oven as well so watch your granola after 17 minutes. You're going for golden colour.
You can serve it with plant milk or plant-based yogurt. It combines with coconut yogurt best. Cut some fruit and add it to the bowl or some nuts and seeds. Wholesome breakfast guaranteed!
