Ingredients

  • 1 can tomato pieces in their juice or 400 ml
  • 1 small red onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 300 g pasta
spices
  • 1 tsp salt
  • ½ tsp thyme
  • ½ tsp oregano
  • ½ tsp basil
  • pinch black pepper
  • pinch cayenne pepper if you like it hot

Method

  1. Chop onions in small pieces. Do the same with garlic.
  2. In the meantime boil water for pasta in the kettle. Pour it into a pot and don't forget to turn on your stove. Add some salt and pasta to the pot and cook it for 10 minutes (or as long as the packaging says).
  3. Warm up oil in a pan. Once it's hot, add onions to the pan and stir frequently. You don't want to burn your onions. After about two minutes add salt and stir. Continue sautée-ing onions for about 3 more minutes.
  4. Time to add tomatoes. We're almost done here! Pour tomatoes into a pan and stir.
  5. Add all the spices and thinly chopped garlic. Stir them into the tomato sauce. Bring to boil.
  6. Drain pasta, add it to the plate and pour tomato sauce over it. Garnish with some parsley or basil to add freshness to the dish. Now, that was easy, wasn't it?

Notes

You can easily add a mix of Mediterranean spices instead of all the listed spices (use 1½ tsp).
Don't miss out on the garlic. You really don't want to miss the umami flavour it gives to the sauce.
