Simple Rhubarb Compote

This simple rhubarb compote is a delicious homemade treat for hot summer days. It only takes 20 minutes and I bet it will become your new summer hit.

Ingredients
  

  • 500 g rhubarb stalks
  • 75 g sugar
  • 5 whole cloves
  • 1 tsp ground cinnamon
  • 500 ml water

Method
 

  1. Clean and peel rhubarb stalks. Cut them into 1.5 cm thick pieces.
  2. Put rhubarb into a pot, pour over the water and add sugar and spices.
  3. Slowly bring to boil. Let it simmer for 2-3 minutes. After that, turn the stove off.
  4. Let it cool down a little. You can serve it hot, but I prefer it cold from the fridge.
  5. You can serve it with coconut whipped cream, vegan vanilla ice-cream, or some fresh strawberries.

Notes

If you don't peel rhubarb, it will not soften well and it will have a lot more woody fibre texture to it. You can try without peeling but I do not recommend it.
