Gnocchi with Creamy Pumpkin Sauce

What is a better fall meal than a bowl full of gnocchi with creamy pumpkin sauce? A bit of hot sauce and this recipe will keep you warm on cold days.

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion red
  • 2 cloves garlic
  • 300 g pumpkin hokkaido or butternut squash
  • 2 tomatoes fresh
  • 100 ml cooking cream soy or oat
  • tsp salt
  • tsp rosemary chopped
  • 2 tsp hot sauce with truffles
  • 500 g gnocchi

Method
 

  1. Chop onion and garlic. Cut pumpkin and tomatoes into 1x1cm dices.
  2. Warm up water for cooking gnocchi.
  3. Warm up olive oil in a pan. Sautée onions and after a few minutes add garlic. Then add pumpkin. Cover the bottom of the pan with water and cover the pan with a lid. Let it simmer for 7-10 minutes.
  4. Cook gnocchi in boiling salted water. For detailed instructions check the packaging.
  5. Then add a bit more water to the pan and let it simmer for 5 more minutes so the pumpkin softens well. After that use a fork to mash pumpkin. We want this sauce to be creamy, but we still want some pumpkin pieces in there.
  6. Now add cooking cream and tomatoes. Stir it well and let it simmer for a minute or two.
  7. Add salt and rosemary. At the end add the hot sauce and stir it all in.
  8. Add cooked gnocchi to the pan with the sauce and stir them in.
  9. Your dish is ready to be served!

Notes

You can use any kind of pasta with this sauce.
