Easy Banana Bread Scones

Ingredients
  

  • 250 g all-purpose flour
  • 80 g sugar
  • 1 tsp baking powder
  • 1 pack vanilla sugar about 8g
  • 1 tsp cinnamon
  • 100 g coconut oil
  • 1 banana
  • 100 g chocolate

Method
 

  1. Turn on the oven to 180°C.
  2. Mix all the dry ingredients - flour, sugar, baking powder, vanilla sugar, and cinnamon - in a large bowl.
  3. Add coconut oil (hard, not melted) to the dry ingredients and mix it in so you get a crumbly texture.
  4. Mash a banana. Chop chocolate or use chocolate drops.
  5. Add mashed banana to the crumble and knead so that banana in mixed evenly into the dough and the dough forms a ball.
  6. Now add chocolate chips and gently knead them in. Make sure you don't over-knead the dough!
  7. Line a baking sheet with parchment paper.
  8. Sprinkle your working surface with flour and place dough on top of it. Shape it into a disc, about 2-3 cm thick. Using a knife, cut it into 8 pieces as if you were cutting a pizza or a cake. Place those pieces on the baking sheet, making sure there's some space between the pieces as they will grow while baking.
  9. Bake scones at 180°C for about 15 minutes or until golden brown.
  10. Once baked, take them out and place them onto the cooling rack. Serve them with whipped cream and tahini.
