I’ve been dreaming of making my own wild garlic pesto, although I didn’t really know how versatile it is. Soon after I made my batch I created this wild garlic pesto pasta recipe and it’s been on our meal plan every week ever since.
The magic of wild garlic
Wild garlic is one of the wild plants that grow everywhere in Slovenia. In spring, there are whole meadows covered with wild garlic. Just like dandelion leaves, wild garlic is a plant Slovenians love to pick to use at home.
You wouldn’t believe how many things you can prepare with it! Wild garlic pesto pasta is just one of the simplest recipes, but wild garlic is so much more than just pesto. You can prepare it in a salad along with other green leaves. Or you can add it to lasagna, to börek or ‘Å¡truklji’ (which is very similar, but usually cooked – you can check a basic recipe here). Making soup is another super simple way of using fresh leaves. Making wild garlic pesto gives you additional possibilities. Making pesto pasta or risotto, adding wild garlic pesto to pizza or to a sandwich. It’s incredible, I’m telling you!
Deliciousness called wild garlic pesto pasta
Of all the dishes mentioned above, I like pasta the most. Firstly, I love pasta above all. I prefer it to rice for sure. This recipe literally takes minutes – basically just as much time as pasta needs to be cooked. While pasta is cooking, you prepare cashew cream and that’s really it. The outcome is incredible. No time needed for a thing this good? I’m in, anytime and all the time.

Wild Garlic Pesto Pasta
Ingredients
- 200 g pasta wholemeal
- 1 tbsp wild garlic pesto
- 2 fistfulls cashews soaked in hot water
- salt if needed
Instructions
- Boil up water for pasta and cashews.
- Cook pasta in boiling salted water. Meanwhile, prepare everything else.
- Soak cashews in boiling water for about 5 minutes. Then add them to a blender and blend them well along with the water they were soaking in.
- When pasta is cooked, add cashew cream and pesto to strained pasta and mix it all well.
- Serve. That's literally it!
