This speculaas cake was a little dream Anja and I had before we turned it into reality. We talked about collaboration and recipe creation. And this is what came to be. I remember dreaming about this spiced cake with candied oranges, some white cream, and a moist, sticky, sweet vegan caramel sauce. I’m so happy we made it and we can now bring this vegan speculaas cake with caramel sauce to you.

 

 

Vegan spiced cake and healthy caramel

Anja and I obviously decided to create a vegan dessert – I’m vegan and she’s not, but she and her family like vegan foods. She trusted me and us both that this dessert will be what it needs to be: soft, luscious, sweet, and a perfect combination of tastes. That’s what happened. This cake is perfection.

We wanted to bring some Christmas spirit into this vegan speculaas cake with caramel sauce, so we added spices to both, the cake itself and the caramel. Spices paired with candied oranges create a lovely Christmas spirit and the caramel is like a cherry on top.

Our vegan caramel is made with whole almond butter, agave syrup, and coconut cream. I cannot tell you how gorgeous this combination is. You’ll simply have to try it yourself. It’s sticky and sweet like the classic caramel, but with a lot less fat and no refined sugar. It tastes better than the classic, if you ask me.

 

 

How to not mess it up

It sounds complicated now, but the preparation is in fact pretty simple. I’ll give you some guidelines nonetheless, just to make sure everything is clear and you can enjoy this cake after the first try.

Use vegan butter or coconut oil. Margarine tends to separate into fat and water after beating it with an electric mixer. Vegan butter is a bit different than margarine and works a lot better for this kind of preparation. Coconut oil in hard form works well too but tends to melt quickly.

There’s a long list of spices in the ingredients list. You can use a premade mix of gingerbread spices, speculaas spices, or something similar. Just make sure there are cinnamon, ginger, cloves, nutmeg, and possibly cardamom in the mix. All spices have their spot in this recipe for a reason, but the first 4 are essential.

Apples are very important because they somehow act like eggs would. They add moisture and keep this cake fresh and soft for longer. I haven’t tried using pears or bananas and I feel apples are the best choice anyways.

When combining all the ingredients be gentle. There’s baking powder in the dry ingredients. If you mix it too strongly and too much it might not do its job in the baking process. It activates as soon as it gets in touch with liquid, so mix the batter just before you pour it into the baking tray and bake it. Don’t forget to be gentle.

When you’re making this cake, I would recommend you use whipped cream, too. It’s in the recipe, but it’s not an essential part of the ingredients list. It does add softness to the cake and rounds the taste very nicely. Without it, this cake can seem just a little too much, but this whipped cream on top is like a cloud of tenderness.

Follow the instructions for this vegan speculaas cake with caramel sauce closely and you should be fine.

Vegan Speculaas Cake with Caramel Sauce

Ingredients
  

Cake

  • 100 g vegan butter
  • 120 g brown sugar
  • 450 g all-purpose flour
  • 1 pack baking powder 4 tsp
  • 3 tsp cinnamon
  • 1 tsp powdered ginger
  • ½ tsp coriander
  • ½ tsp cardamom
  • ½ tsp allspice
  • tsp ground cloves
  • tsp ground nutmeg
  • pinch salt
  • 250 g candied oranges
  • 250 g apple
  • 200 ml oat milk
  • 200 ml full-fat coconut milk from a can
  • 200 ml vegan whipping cream

Caramel

  • 2 tbsp whole almond butter
  • ½ tsp cinnamon
  • tsp ginger
  • pinch coriander
  • pinch cardamom
  • pinch allspice
  • pinch ground cloves
  • pinch nutmeg
  • 4 tbsp agave syrup
  • ½ tbsp full-fat coconut milk

Instructions
 

  • Add vegan butter and sugar to a large bowl and whip it with electric mixer until you get a fluffy and even cream.
  • To another large bowl, add all the dry ingredients - flour, salt, and spices. Mix well with a whisk.
  • Cut apples into pieces and blend them along with oat milk and coconut milk.
  • Now combine all the ingredients into an even batter. Fold in candied oranges.
  • Bake in a long rectangular baking pan (usually used for bread loaves) and bake at 180°C for 45 minutes.
  • While your cake is baking, make caramel sauce. Add all the ingredients for caramel sauce to a blender and blend well or add them to a bowl and mix with electric mixer.
  • Whip your whipping cream in a tall bowl until it's firm and holds its shape.
  • Once your cake is baked well, let it cool down completely.
  • Before you serve it, spread whipped cream on top and pour some caramel sauce over it. You can decorate it with fresh oranges, too.
