With “the best” I mean we don’t really make any other sandwich at home but this. For a good reason. The best vegan sandwich is simply the best sandwich ever. Here’s why.

 

The easiest vegan sandwich

I can say in general we don’t eat many sandwiches. We surely eat a lot of bread, but we usually have it with a stew for lunch or we spread hummus on it for breakfast (I’m not sure that qualifies as an open sandwich). Sandwiches are rarely on the menu but if they are, they better be good. Like everything I make, because I’m enough of a hedonist to make sure my food is absolutely delicious.

This sandwich is stunning for 3 reasons:

-> It’s prepared with 5 ingredients

->The ingredients fall together like a puzzle and create a beautiful harmony of tastes

-> It somehow reminds me of a classic ham-and-cheese sandwich but it’s a lot healthier and A LOT tastier

I’m not underestimating the prep time when I say it’s ready in 5 minutes (unless you want to toast it). And not just that – paired with some warm soup it can make for a quick lunch, too. It’s packed with protein, fibre, and carbs so it’s like a perfect meal.

What makes it so special?

In my opinion, this sandwich fulfills all my cravings:

  • it calms my carb craving
  • it fulfills my tastebuds’ cravings for delicious taste
  • it fulfills the cravings of my brain and my body: craving for fibre, protein, and something healthy

The thing that lifts the best vegan sandwich (ever) to another level is sun-dried tomatoes.

Natural tofu creates this lovely base with a neutral taste and somehow cheese-like texture.

Hummus is not only one of the best things that ever happened to mankind, but it’s also the ingredient that brings in some meaty flavour with garlic and cumin (that are most often the main two spices in sausages, salami, etc).

I can honestly say that I could not recommend this sandwich more. It’s tasty, it’s simple to make, and it’s heatlhy, too. No reason why you wouldn’t make it for yourself.

 

How to adjust this vegan sandwich to your liking?

I wouldn’t move too far from the original recipe if you want the whole experience. But you can make some minor adjustments:

You can use your favourite hummus, whatever it might be. I make this sandwich with natural hummus, but you can also try making it with beetroot hummus, curry hummus, chili hummus, etc. I make my own hummus (recipe for natural hummus is here and for beetroot hummus here), but you can simply buy it in the store.

My favourite bread is wholemeal bread – dark, stiff, packed with seeds if possible. You can go with any bread you like, but I think the best taste comes with wholemeal bread.

Rocket (arugula) can be replaced by other greens, like lettuce or spinach. I think rocket is the best for its distinctive, slightly spicy taste. But lettuce works great, too.

Sun-dried tomatoes cannot be replaced, I’m sorry. You have to use them. They are the most flavourful ingredient (apart from hummus) that brings in the umami taste. So do yourself a favour and don’t miss out on them. But here’s a tip: I usually buy them in oil so once I take them out and strain them a bit, I also wash them under running water to remove excess oil.

The Best Vegan Sandwich

Easiest, most delicious, simply the best vegan sandwich there is. Prepped in 5 minutes it can be a healthy snack, a breakfast, or even a quick lunch.

Ingredients
  

  • 4 slices wholemeal bread
  • 4 slices natural tofu can be smoked, too
  • 1 fistfull rocket or 2 leaves of lettuce
  • 2 tbsp hummus
  • 6 pieces sun-dried tomatoes

Instructions
 

  • Slice your bread if it's not already sliced.
  • Spread one tablespoon of hummus onto each of the two bottom slices of your sandwich bread.
  • Place 3 pieces of sun-dried tomatoes on top of each slice of bread with hummus. I buy sun-dried tomatoes in oil so I strain them and then wash them under running water.
  • Next up: rocket. Add a bit to each of the two sandwiches. Don't forget to wash it beforehand.
  • In the end, cut 4 thin slices of tofu and place 2 into each of the sandwiches.
  • Cover with the top slice of bread and enjoy!

Notes

If you want you can also toast these sandwiches. In this case I recommend you add rocket or lettuce after toasting, otherwise it will cook and become sluggish.
