People say paradise would not exist without mango (and papaya). They are sooooo right. Mango is just so juicy and sweet and delicious and comforting. It feels good in any situation, no matter the weather or the condition you’re in. Blending it into a simple vegan mango lassi takes your mango experience to another level.

Needless to say I am in love with a combination of mango and yogurt. As my love for Indian food is almost unconditional so is my love for Indian sweets. Simple vegan mango lassi seems like a perfect thing for me. It’s the easiest thing to prepare, it’s ready in 5 minutes, low in calories and so delicious it makes my heart sing.

I fell in love with simple vegan mango lassi in Berlin, when my friend and I went for dinner and ordered mango lassi as a dessert. My friend took a ‘normal’ one and I took a vegan version. Fun turn of events: she was mad because mine was better than hers. Well, vegan life pays off and is getting better and better.

 

 

What I love the most about simple vegan mango lassi is that one glass of this gorgeous drink fills me up for about two hours. For me it is a perfect little snack when my energy levels drop and I need something filling and sweet. It can serve as a quick breakfast, a snack, a post-workout drink, a dessert or a refreshing beverage. You can easily store it in the fridge for a day or two.

Simple Vegan Mango Lassi

Mango lassi is an excelent drink for hot summer days. It's really easy to make and the taste is absolutely amazing.

Servings 2 glasses

Ingredients
  

  • 1 cup mango fresh or frozen
  • 1 cup vegan yogurt coconut or soy
  • ½ cup mylk soy, oat, cashew, almond
  • 1 tbsp agave syrup not necessary
  • pinch cardamom
  • 2 tsp lime juice
  • * a bit coconut, cashews, almonds or anything else for topping

Instructions
 

  • Put all of the ingredients into a blender. Turn it on and blend until smooth. It shouldn't take more than 1 minute.
  • Pour mango lassi into two glasses and top with whatever you wish. I used chopped cashews and a bit of cardamom. You could also add almonds, brazil nuts, lime peel, shredded coconut or coconut chips.
  • Enjoy!

Notes

You can switch lime juice for lemon, but keep in mind that lime has a special twist to its taste. 
Agave syrup is used to enhance the taste, but you can easily skip it if you want to avoid added sugar.
