I’m all into the Christmas spirit this year. I’m in love with December! <3 It might have been because of the snow we’ve had these days … Whatever the reason, I’m baking and this simple rich vegan marble cake was a must-do since November.
Why is this marble cake any different than other marble cakes?
Honestly, it is not. I guess. But I’m loving it. It requires no special ingredients, therefore, you probably have everything at home already – unless you ran out of mostly everything and you HAVE TO go shopping.
I remember I once found a recipe that called for a bag of vanilla pudding powder and a bag of chocolate pudding powder. I had none of these two at home so I just skipped that recipe. I made up my own recipe that is simple and comes together in no time. I just love it when it’s simple and quick.
The only thing that might make you wonder is apple mousse. If you’re more on the vegan side you probably have it in staples. But if not, you probably have apples at home and therefore can simply blend them with required milk et voilá – you have your apple mousse.
Anything I need to know before I make a simple rich vegan marble cake?
This vegan marble cake will not last too long. You’ll probably eat it in a day or two. We did, at least – it’s just so good! But because it’s nice and moist it will probably last a few days without drying out or going bad.
I love it when it’s cold or warm! The lukewarm version (when I kept it on the countertop) was my least favourite. Keep it in the fridge for a delicious bite with warm coffee. It makes me want to eat some right now.
There are different ways of creating the marble pattern in the cake – three are described below in the recipe. Just play around, it’s marble cake – you’re allowed to do whatever pattern you want.

Simple Rich Vegan Marble Cake
Ingredients
- 400 g flour
- 150 g brown sugar
- 3 tsp baking soda
- 550 ml plant milk
- 300 ml apple mousse
- 2 tsp vanilla paste
- 100 ml oil
for brown batter
- 3 tbsp raw cocoa
- 5 tbsp plant milk
Instructions
- Add all the dry ingredients to a large bowl and whisk them together. Take all the wet ingredients and add them to a smaller bowl. Whisk these together too.
- Add the wet ingredients to the dry ingredients and whisk them together.
- Take half of the batter and put it in another bowl. Add cocoa and additional milk to one half of the batter. Now you have the light and the dark batter.
- You can use a round baking tray or the rectangular one. Line it with parchment paper.
- There are different ways of creating marble. You can spoon the batter in, adding one spoon of the light batter and one spoon of the dark one, repeating the process until you run out of the batter. This will create a zebra effect as you can see with my cake. You can also pour in a bit of one batter, then a bit of the other, a bit of the first, and a bit of the second. That will also create some swirls. The third way is to pour in one batter, then add the second one and create swirls by using a knife or an iron stick to swirl the batter around inside the tray (don't over-do it though or you might lose the swirls – been there, done that).
- Bake at 180°C for 1 hour. Let it cool down a bit before cutting it.
