For a while, I was obsessed with the combination of lemon and poppy seeds. At that time I created my poppy seed lemon cake. Around that time the idea for these lemon poppy seed muffins came about.

One muffin is never enough

I still love the lemon and poppy seed combo and I am coming up with new ideas with it in mind all the time. But I have to say that out of all the recipes that pop up in my head, this was a real hit in our house (and still is). Every time I make these muffins, they are gone in a day.

I feel like muffins in general are something that you cannot stop eating. Or maybe it’s just us that are crazy about them. One muffin is never enough and two become three in no time. Especially if they are juicy and not too sweet, like my beloved lemon poppy seed muffins.

 

What makes these lemon poppy seed muffins special?

A while ago I was making banana bread muffins and I blended together coconut butter, sugar and yogurt into a fluffy cream. And, oh my, did that make muffins juicy and light! So I used that technique again in these muffins. I am telling you, this is a secret sauce.

What I feel makes these muffins very special is that they are prepared with date sugar or coconut sugar. I especially love date sugar – it’s actually just dehydrated dates, ground into flour. Full of fibre and good sugars that cause no blood sugar spikes.

When I was making them for the first time I used white flour and brown demerara sugar. Muffins were super light in colour and very sweet, too sweet for my taste. I have to say I like the healthier version a lot more so that’s what I am sharing with you. I bet you’ll love it too.

Lemon Poppy Seed Muffins

As juicy as can be, these lemon poppy seed muffins are a perfect treat on a week-night or during the weekend.

Ingredients
  

  • 200 g flour all-purpose or whole-meal
  • 30 g poppy seeds ground
  • tsp baking powder or baking soda
  • 100 g ground dates or coconut sugar
  • 1 pack vanilla sugar (8 grams)
  • pinch lemon zest or 1 pack lemon sugar
  • 50 g coconut oil hard
  • 100 g coconut yogurt
  • 40 ml lemon juice
  • 200 ml plant milk oat

Instructions
 

  • To a bowl or a blender add coconut oil, yogurt, ground dates, vanilla sugar, and lemon zest (or lemon sugar). Blend it all, but be careful it doesn't get too warm and the oil starts to melt. You can also use a hand mixer for this step.
  • To a large bowl, add flour, poppy seeds, and baking powder. Whisk well.
  • To a separate bowl or measuring pot add plant milk and lemon juice.
  • Add the coconut oil and sugar mix to the large bowl and pour the milk and lemon mix over it. With a whisk, gently mix the batter, but don't overmix it. Baking powder will immediately start the raising process.
  • Grease a muffin tray or use paper cups. With a spoon, add batter to each of the 12 holes. Make sure the batter is evenly distributed.
  • Bake at 180°C for about 20 minutes.
  • I recommend you let the muffins cool down before you eat them, they are absolutely gorgeous when they are cold (possibly from the fridge).
