I feel like banana bread is a universal dessert that can be made on any occasion. Creating a recipe for festive banana bread with nuts was just another way to prove it.

It is indeed a highly nutritious dessert with a lot of fibre, little fat, little added sweeteners and loads of minerals. Fruits and nuts are surely an incredible addition to the classic simple banana bread.

 

Festive Banana Bread with Nuts is one of the simplest festive desserts ever

Sometimes I like to play around with complicated dishes and desserts, but mostly I am all about simple solutions. That’s why this recipe doesn’t ask for anything unusual. I mean, I’m often avoiding even egg substitutes (like flax seeds or chia seeds), just because I’ ‘m trying to minimize the number of ingredients.

Therefore I created a very simple banana bread recipe. Festive banana bread with nuts is festive just because of all the additional ingredients like chocolate, nuts, and fruits. The base is the same as it is for my classic banana bread recipe.

 

Can I use other ingredients?

Sure thing.

You can easily add more nuts or fruits to the mix, or take some out. Play around with it!

Instead of oat milk, you can use any other plant milk.

You can leave out the oil. Banana bread might not be as moist without it and you’ll have to add a bit of liquid to get a good consistency of the batter. But it will do without it too.

Festive Banana Bread with Nuts

Moist and very simple festive banana bread with nuts and dried fruits. One of the easiest ways to make your holidays sweet in a healthy way.

Ingredients
  

  • 200 g flour wholemeal
  • 100 g oat flour
  • 3 tsp baking powder
  • pinch salt
  • tsp cinnamon
  • ¼ tsp cardamom
  • 150 ml oat milk
  • 1 tsp lemon juice
  • 3 tbsp coconut oil
  • 3 bananas big, ripe
  • 100 g hazelnuts
  • 100 g almonds
  • 100 g dried figs
  • 100 g raisins
  • 100 g chocolate

Instructions
 

  • Soak raisins in hot water. Chop chocolate into small chunks. Chop hazelnuts and almonds. Cut figs into smaller pieces.  Mash bananas using a fork. Melt coconut oil.
  • Add flour, oat flour, baking powder, salt, cinnamon, and cardamom to a large bowl and whisk them together. Add milk, oil, lemon juice, and mashed bananas to a smaller bowl and stir them.
  • Add the wet ingredients to the dry ingredients. Mix them together. Add all the other stuff – nuts, dried fruits, and chocolate – to the batter and stir them in.
  • Pour the batter into a rectangular baking tray lined with parchment paper and bake at 180°C for 60 minutes.
